Coconoa Killa
A collaboration with Boiler Brewing in a genre they do very well and we have very little experience in: the “baby pastry stout.” Working with Boiler Brewing from the Chicago area—a region famous for its massive barrel-aged stouts—we created a smaller beer that packs just as much punch. We smacked this with almost more adjuncts than a barrel-aged beer, including loads of pecans, walnuts, peanuts, and coconut that we hand-toasted in our church. Finally, we ran the beer through a chamber of hand-cut vanilla beans, almost like making a vanilla shake.
